Beef Cheek Barbacoa Tacos

Beef Cheeks
  • 10 beef cheeks
  • 1⁄2 cup salt
  • 2c aarons adobo mix
  • 1c garlic chipotle love
  • 2c beef or chicken stock
  • 2 whole banana leaves, grilled 2T mojo de ajo
  • 2 flour tortillas
  • 3.8 ounces barbacoa
  • 1.2 ounces marinated white onions (lime juice , salt, cilantro) 1 ounce tomato guajillo salsa
  • 0.075 ounces micro cilantro


1. Mix the adobo seasoning mix, garlic chipotle love and stock to form a loose paste. -marinate the beef cheeks in the paste for about 12 hours.
2. Put marinated cheeks on a sheet tray, cover with foil and roast in an oven at 275 degrees for about 4 hours or until tender. Let cool.
3. break the cheeks apart into large shreds and mix with the liquid in the pan. Keep warm in a steam well.
4. On the plancha, let the barbacoa crisp up slightly and season with salt if needed and mojo de ajo
5. Place barbacoa inside of a tortilla, top with tomato-guajillo sauce, and garnish with marinated white onion and cilantro.
