Seared Gulf Fish Salad

I love this dish because it is so simple, fresh and easy to make at home. This is a a great light meal for the warmer months and whether you are making this for yourself or your whole family, it is sure to satisfy. Feel free to play around with the different kinds of gulf fish that you add to this to create some variation and add your own spin!

Cilantro-Lime Dressing
  • 1qt toasted pumpkin seeds , toasted
  • 1 bunch of cilantro
  • 1pt vegetable bouillon
  • juice of 2 limes
  • 1c olive oil
  • 2T apple cider vinegar
  • salt
  • 5oz piece of gulf fish such as snapper , grilled
  • baby squash , grilled
  • pickled onions
  • baby carrots , blanched
  • haricot vert , blanched
  • cherry tomatoes , halved
  • avocado , cubed
  • pickled pink beets , halved


1. Season your piece of fish with salt and pepper and rub with a little olive oil. Grill as desired and squeeze a little fresh lime on top, set aside. Take the assorted vegetables and toss with the cilantro-lime dressing. Place vegetables on the plate and place the grilled fish on top.

2. To make the Cilantro -Lime Dressing, take a food processor or blender and add toasted pumpkin seeds, cilantro, veg bouillon and puree, stream in olive oil, and then the vinegar and lime juice. Season with salt. Should be a thick chunky vinaigrette.
